Asian martial arts aren't just trying to beat someone else, they try to develop their own skills and control. That's why I think Mulan would like to it more than Merida and besides Mulan never said she hates fighting. Probably killing but I think she likes it as an art form and for defense.
Merida instead fights more wild with heavy sword and use much strength. I don't think she'd had patience to learn discipline and in comparison with scottish large swords katana doesn't looks so impressive.
