My faveourite scene with Merry and Pippin in the movie is the one that's in the extended version. They are Загрузка their things on boats in Lothlorien and Legolas comes and puts Lembas хлеб in their boats and says that one small bite is enough to fill the stomach of a full grown man.
Merry asks Pippin how many did he eat, and he says nonchalantely 4. Hahaha, I cried of laughter when I was watching that.
And from the books...? Hmm, good question...I don't know, I can't really remember anything very momentous, if I could say so...I read the Книги only once...

From the movie It would be ether that thing with the carrot when the Присоединиться up with Frodo или Sam или the "no секунда breakfast?" thing. They are so funny and adorable.
