The changes in Odo are pretty obvious, but I think Kira changed a lot as well, notably learning to be patient. she took Gaia Odo's advice ("the Odo that you know will change too, IF you're patient with him").

Kira learned a lesson after their 'make-up' scene from "Tears of the Prophets." What to her was an inconsequential squabble had Odo believing she wanted to break up with him. When she realized that 1) he took her words literally. When she says "Goodbye, Odo" he thinks that means goodbye forever, and 2) when he admits that "observing humanoid relationships and being in one are two different things."

After that episode, we don't see Kira's legendary impatience and temper around Odo. In fact, she seems to go out of her way to be patient and indulgent with him. It isn't until "Chimera" that Odo takes her to the breaking point.

So I think they both changed a lot as a result of getting together - for the better.

I definitely think they changed each other. With each other, they were openly affectionate, even in front of others. For Odo, Kira comes first ... even when it comes to pestering Quark. Kira also was a lot different around Odo than with anybody else. She learned that with Odo she could lay her burdens down and depend on him, that he would be there for her no matter what. She didn't have to be strong ALL THE TIME. And Odo was the one who knew how to comfort her - not only with words, but with his embrace ... as in "Treachery, Faith, & the Great River" and "Chimera."
