To answer your question, Maia says it in the second book to Magnus when she goes over to Luke's place and is attacked by the demon. It's, I think, around chapter 11 maybe 12. And I have to agree with you about my last Simon quote, that quote does make me sad whenever I read it. But it has to be one of my favorites.
